Our newest venture into unique rubs is a dried version of a Mexican classic sauce: molé. Olé Molé is a complex cocoa-based rub with multiple layers of flavor that envelop everything you put it on. Vanilla, peanut, and winter spices are some of the tones in this exotic mix. Traditional molé takes 12-16 hours to prepare and often has more than 20 ingredients in the sauce. We used about 15 ingredients to mimic this classic, and it takes only a moment to shake it on. Our favorite way to eat Olé Molé is to coat a chicken breast or boneless pork chop and bake for 40 minutes or until cooked. ¡Olé!
